Grilled Tequila Alaskan Silver Salmon
Marinaded, grilled salmon with fresh vegetables and
Sesame-Chive Butter on a bed of Soba Noodles.

- 4 (4 to 6 oz. each) Silver Salmon fillets, thawed
- Canola
Oil
- Tequila
- Soy Sauce
- 3 Limes
- 3 lbs. unsalted butter
- chives or green onions
- 1/4 cup sesame seed
oil
- salt and pepper
- Red Pepper
- Green Pepper
- Red Onion
- Celery
- Carrots
- Soba noodles (egg noodles) optional
Marinade
Mix equal parts of Canola Oil, Tequila and Soy Sauce
(enough to cover salmon). Squeeze 3 limes into marinade
and place the squeezed limes in the marinade also.
Marinate salmon for 2-3 hours before grilling.
Sesame-Chive Butter
Blend 3 pounds of unsalted butter with 1/4 cup of sesame
seed oil and add the chives (or green onions) to the
blend. Salt and pepper to taste.
Fresh Julienne vegetables
Slice uncooked red pepper, green pepper, red onion, celery
and carrots into long narrow julienne strips. Refrigerate
until serving.
Grilling
Remove the Salmon from the marinade and grill until done
to suit you.
